🍅 Roasted Vegetable Pasta Sauce / Soup

Since it’s September already, I thought I’d share this versatile recipe I’ve been using for over a decade.
In the video, I am using the stovetop, but I think it is easier and tastes better when you oven roast the vegetables first. I’ll make sure I include that in the instructions.
It can be a hearty soup or a pasta sauce - perfect for any fall/winter meal.

INGREDIENTS
1 roughly chopped onion
4 stalks of roughly chopped celery
2 roughly chopped carrots
2 lbs Roma or cherry tomatoes
7-8 cloves of garlic
1 can tomato paste
4 tbs butter (replace with more olive oil or vegan butter if vegan)
4 tbs olive oil
2-3 drops dōTERRA Italian Blend
Salt & Pepper
Dried parsley
INSTRUCTIONS
1. Preheat oven to 400°F
2. In a large bowl, mix onion, celery, carrot, tomatoes, and garlic with olive oil and 1 tsp salt
3. Transfer to a sheet pan & bake in the oven for 40 minutes
4. In batches, blend until smooth
5. In a large pot, add butter, tomato paste, and dōTERRA Italian Blend on medium heat, then add blended sauce
6. Taste for seasoning
7. Enjoy as a soup or add pasta, garnish with Parmesan cheese and more parsley
I love making this when the weather cools down!
