This is my (British) Mum's Trinidadian Curry in the process of being cooked.. My Trinidadian father's friends were concerned he might starve (or worse, live on Spam and canned food!) when he married a British woman in the 1950's. So they got together and taught my mum this dish. I've lost both my parents now but this dish represents their (albeit imperfect) union, and was one of the few 'constants' in my hotchpotch childhood. This was my 'beans on toast'. ❤️It is served with brown rice (mum's 'health-conscious middle class' touch!) with blackeyed beans. Kx
