I know this picture is unsharp, but I wanted to show you 100% whole wheat sourdough croissants I made today. They were unfortunately underproofed and I was quite underwhelmed by their flavor (so bitter). Will try them again soon with some adjustments and different flour ( freshly milled white wheat maybe). The good thing - my new marble rolling pin goes so smoothly and defines layers so much better!
