Love these Easy mini Caramel Tarts from @TheDreamyLeaf! (full recipe below) Easy Mini Caramel Tarts, zero to glorious in 15 minutes! This is so easy to prepare and so much fun to have available in the freezer for whenever the dessert craving calls. No refined sugars, #nobake, #glutenfree, #vegan, and incredibly delicious.
Filling
¼ cup tahini
¼ cup peanut butter
¼ cup maple syrup
¼ cup almond milk
1 teaspoon vanilla extract
½ teaspoon cinnamon powder
pinch of salt

Crust
½ cup roasted hazelnuts or pecans
¾ cup raisins
pinch of salt
Topping (optional)
2 tablespoons cocoa nibs

Instructions
Grind all the crust ingredients in a food processor until you get a sticky paste. Roll this paste out between two sheets of parchment paper. Place this crust on the bottom of small tart molds. Put the molds in the freezer and move on to make the filling.

Put all the filling ingredients in a high speed blender and blend until smooth. Add the filling over the crust in the tart molds. Place back in the freezer and wait for at least 4 hours. Top with cocoa nibs and serve frozen, or thawed but very cold, depending on preference.
