SEARED SCALLOPS SALAD WITH BACON VINAIGRETTE

This salad with seared scallops and fresh fruit was prepared with my Pink Salt and Pepper and recently released and sold out Bacon Lovers seasoning???

Ingredients:
1/4 lb wild caught scallops
2 tbsp ghee/butter (for fying scallops)
FlavorGod Pink Himalaya Salt and Pink Peppercorn to season
2 strips bacon, cut into 1/2 inch pieces
1 tbsp scallots, finely chopped
3 tbsp olive oil
2 tbsp apple cider vinegar
2 tbsp balsamic vinegar
2 tsp honey
1 tsp Dijon mustard
1/2 tsp FlavorGod Bacon Lovers seasoning
pinch of Pink Himalaya Salt and Pink Peppercorn
Lettuce/Greens mix
grapefruit or orange slices

Preparation:
In a heavy bottom pan/cast iron skillet, fry bacon pieces until crispy. Remove bacon and allow to drain on paper towels. Saute the shallots in the remaining bacon fat until fragrant (about 3-5 minutes). Remove shallots and remaining bacon fat into a bowl. In that same bowl, add the olive oil, vinegars, honey, mustard, Bacon Lovers seasoning and pinch of Pink salt and peppercorn. Whisk until combined and stir in bacon pieces. Set dressing aside.

Heat 2 tbsp ghee/butter in the same pan/skill. Seasoning scallops with FlavorGod Pink Salt and Peppercorn. Sear scallops 2 minutes on each side or until a nice crust forms.
Top lettuce/greens mix with the seared scallops, drizzle dressing over and top with grapefruit/orange slices.
