It’s not uncommon for elite restaurants to refresh or reorient themselves every few years, and @delposto is no exception. In 2010, the palatial Italian restaurant on 10th Avenue in Manhattan received a 4-star review from @samsifton, who was then @nytfood critic, but its latest wave of luxury manifests itself across the board — in the food, the service and the décor. A meal now begins with the distribution of warmed hand towels that have been suffused with rosemary oil. And the service is meant to be both warmly conversational and classically buttoned-up. “Like a big hug from Grandma,” said Matt Abdoo, the chef de cuisine. “If Grandma happened to be Italian royalty.” @francescosapienza photographed @delposto’s baked timpano before it was plated.
