DIY Almond Milk Did you know you could make your own almond milk? Here’s how: (NOTE: You will need a nut milk bag, stocking or piece of muslin/cheese cloth for this recipe. If you plan on making nut milk regularly, a nut milk bag is inexpensive and will make this process so much easier!) 1 cup raw almonds ½ teaspoon lemon juice 1 teaspoon pure vanilla extract (or ½ vanilla bean, scraped) A pinch of sea salt 3 cups filtered water ONE: Soak the almonds for 8 hours or overnight in enough water to generously cover and a squeeze of lemon juice – they are thirsty little babies! TWO: Drain and rinse well until water runs fairly clear, otherwise you will end up with a bitter milk. Add to a blender with 3 cups of water – the less water the creamier the milk. Add the vanilla and salt and blend on high for at least 30 seconds. THREE: Place your nut milk bag or stocking over a large bowl and pour the mixture through. If you are using a piece of muslin, I often find it easier to use a large elastic band to hold the cloth in place over the bowl so that it doesn’t fall in and lead to escaping pulpy bits. FOUR: Gently squeeze your bag to extract as much milk as you can from the pulp. Once this is done, transfer your milk to a glass jar or bottle and keep in the fridge. Your milk should keep for 2-4 days. P.S. Once it has been sitting for a while, your nut milk will separate, leaving you with a slightly unattractive layered looking drink.
