If you need to prepare a dessert for something this weekend - take a look at this recipe by @aboutthatfood For a Raw Not-Nutella Cake! ?? ___ Ingredients: Base Layer: * 1/2 c hazelnuts * 1/2 c almonds * 12 pitted medjool dates * 2 tbsp cacao powder * a pinch of salt Middle Layer: * 2 avocados * 4 tbsp agave sirup (or liquid sweetener of your choice) * 4 tbsp cocoa powder * 1 tbsp coconut oil * a pinch of lemon juice * a pinch of salt Top Layer: * 1/4 c coconut oil * 1/4 c agave sirup (or liquid sweetener of your choice) * 4 tbsp cocoa powder Method: Line a 26cm cake pan with some baking paper. Add the almonds and hazelnuts into a food processor and blend until they turn into small pieces. Next add the remaining ingredients for the base layer and blend until they form a sticky dough. Add the dough into the cake pan and press down evenly. Next add all the ingredients for the middle layer into the food processor and blend until it turns into a smooth, mousse like texture. Add everything into the cake pan and spread out evenly. Refrigerate the first 2 layers for about 1/2 hour – 1 hour. Next make the final layer by simply mashing all the ingredients together with a fork, the coconut oil has to be room temperature for this. You can also melt the coconut oil but its not really necessary to do so. Finally spread the last layer on top of the first two, make sure to act quickly, as the coconut oil will turn hard almost immediately once it becomes cold. Refrigerate for another 10 minutes to make sure the top layer has hardened completely.
