bright and citrusy a little like asparagus but also deep and earthy a little like spinach - really there is nothing in the world like fiddlehead ferns an they have been dominating in my kitchen these last few weeks - I've used them in everything from risotto to the freshest egg omelette - though I find myself mostly eating them straight from th pan with a little butter and salt because I'm too impatient to wait - these little harbingers of new england spring are some of my favorite produce of the season - I'm sharing a recipe for a beautifully simple fiddlehead & dill weed omelette on the blog today - follow the link in the profile
