A few years ago, if you wanted cultured vegan cheese, you basically had no choice but to make it yourself. Nowadays, there are quite a few artisanal vegan cheeses available for sale in grocery stores and health food shops.

I’ve tried a number of nut-based cheeses lately, but my absolutely favorites are the cashew-based ones by @TreeLineCheese. There are truly phenomenal, and not just for vegan cheese, but ANY cheese!
Btw I've been working on new recipes and I'm excited to share them with you in our next posts.

Here is a very easy one: ?Open Cashew Scallion Cream Cheese Sandwiches on Wheat Toast ?

For 6 open sandwiches.

Ingredients: • 6 ounces (one package) of the scallion cream cheese by @treelinecheese. • 6 radishes, thinly sliced • 1 medium cucumber or 1/2 big cucumber, thinly sliced • 6 slices of whole wheat sandwich bread • 6 medium lettuce leaves ?Assembling the toast: • Toast all the slices of bread. • Spread the cream cheese on each slice of bread then top with the cucumber and radishes and lettuce leaves.
