The lovely @heynicolemaree shared this with us a while ago & not only is it tasty, it's the perfect balance of plant based protein, healthy fats, fibre and antioxidants?
? INGREDIENTS ?
(serves 1 – 2)
+ 1/4 cup chia seeds
+ 1 cup coconut water
+ 1 tsp stevia
+ 1/4 cup mixed berries, mashed
+ 2 tbsp pistachios, chopped ? METHOD ?
+ Mix chia seeds, mashed berries, stevia and coconut water together in a bowl or glass jar. Let it sit in the refrigerator overnight to transform into a luscious gel.
+ Remove from the fridge and make sure your pudding looks thick. Top with extra berries and a sprinkle of pistachio crumble.
