Ingredients
1 1/2 cup desiccated coconut
1/4 cup 100% coconut cream.
1/4 cup Rice malt syrup
1/4 cup coconut paste
1 tsp vanilla extract
15 whole almonds ?

Method
Blend all ingredients (except almonds) in a food processor until well combined. Roll into balls and insert an almond into the centre. Roll between palms again until smooth. Place balls on a tray lined with baking paper and freeze while you make the white chocolate. (Or dip into purchased melted vegan white chocolate) ?

White chocolate coating
Ingredients
1/2 cup cacao butter (melted)
1/4 cup cashews soaked
1/4 cup maple syrup
4 white chocolate essence drops or 1 tsp of vanilla extract
1/2 cup Coconut for dusting ?

Method
Blend all ingredients (except coconut) in the small bowl of the food processor until smooth and glossy. Dip coconut balls in white chocolate and return to freezer to set. Make a second dip into the white chocolate but this time roll in a little desiccated coconut and then place on tray and refrigerate. ?
