I know some of you are getting antsy to get your Chef Knife. Just an Update. The prototype we gave to Chef Russel at @proofandcooper Well It just didn't work. It was sharp and held and edge but the performance part was lack luster. I can't have that. The flaw was in the grind angle and the blade shape. So we scrapped the design and went back to the drawing board. These are the first 3 of the New Improved Design. I just pulled them out of the heat treat oven. We will polish them up and put the serrations on them and test again this weekend. I feel pretty good about it. If all goes well production knives will go out fast!
