1) Whisk 2 organic eggs in a dish, lightly toast some gluten free bread and dip it in the eggs, coating each slice evenly in the mix 2) Heat 1 tsp coconut oil in a pan on a medium high heat and add the toast, allowing to cook until golden on either side 3) Transfer to a plate and throw in the spinach, cooking for about 30 seconds until wilted 4) Serve up and season with tamari and sesame seeds!
