Next up for our exclusive-to-London menu: our "After The Rain" Mousse Cake. I love the moments just after the rain in London, and I wanted to create a flavor that captured that freshness with jasmine, pear and ginger. Fragrant jasmine mousse and pear ginger compote sit atop crispy praliné feuilletine, and it's finished with fresh leaves of lemon balm with jasmine gélee "raindrops."
