Closing out #NationalCookieDay with a Peanut Butter Cookie Skillet from @holyhealth.
Recipe:
1 can chickpeas + 3/4 cup peanut butter + 1/2 cup maple syrup + 1/3 cup vanilla soy milk + 1 tspn vanilla extract + 1 tspn baking powder + 1 bar dark chocolate, crushed.
Blend together everything except the chocolate until smooth. Fold in the chocolate (enjoy some raw) and pour into a greased skillet or square pyrex, bake on 350 for 35-40 minutes.
