Each year to celebrate #Epiphany, we make one of my favorite pastries: Galette des Rois (or "King's Cake). It's filled with almond frangipane in a buttery flaky reverse puff pastry crust (think: almond croissant in cake form!), hand-scored on top to resemble a crown and comes with golden paper crown and little fève (a small prize) so whoever finds it is deemed King for the day.
