It's a #jackfruit kind of Friday! Jackfruit Cauliflower Curry with sautéed Shiitake Mushrooms and Quinoa from @healthylickingfoods. #dinner #dinnertime #Friyay #TGIF
Ingredients:
- 1/2 pound Jackfruit - 1 small head Cauliflower
- 1/2 red Onion
- 2 cloves Garlic
- 1/4 cup shredded Carrots
- 1/4 cup fresh Peas
- 1 can Coconut milk
- 2 tbsp Madras Curry powder
- 1 tbsp Sea Salt (or to taste)
- Cayenne Pepper (optional)

Directions:
- Chop up your ingredients.
- In a preheated large pan, place some extra virgin olive oil and cook the onion until lightly brown.
- Throw in the cauliflower, carrots, peas, garlic, and jackfruit. Place the top of the pan and let it cook for 6 minutes, make sure to stir the pan after 3 minutes. - Place the coconut milk into the pan with the rest of the spices. Mix it well and allow it to cook for a few more minutes to let all the flavors marinate. - Once cooked, serve over quinoa and top it off with some cilantro.
