Recipe for tofu dango:
40g shiratamako (Japanese glutinous rice flour)
55g silken tofu
1. Add tofu in 2-3 parts to the flour and knead gently until you get a soft nice dough.
2. Shape them into appox 4g each for the dango balls, place them on baking paper in sets of 3.
3. Pinch and shape small amount of dough to form the ears and place on the topmost dango ball of each set. You can also make tail design like I did.
4. Add the eyes, mouth and whiskers using edible food pen.
5. Boil water in a pan. Gently place them in the pot and cook at low heat. Big bubbles may cause them to separate or the ears to drop out.
6. Boil for about 5-8mins or until they float.
7. Sieve out and place in a bowl of cold water.
8. Serve with sweetened red beans. Other toppings recommended include black honey syrup and kinako.
