Ingredients
squash 3 whole [, yellow, sliced into thin pieces]
olive oil 2 Tablespoons
mozzarella cheese 16 ounces [, shredded]
ricotta cheese 16 ounces
parmesan cheese 8 ounces
mushrooms 8 ounces [, sliced]
red bell pepper 1 whole [, seeded, cut into rings]
tomato sauce 28 ounces
parsley 1/2 Tablespoon [, chopped]
eggs 2 whole [, beaten]
salt and pepper 1 pinch
red onion 1 whole [, peeled, cut into rings]
tortillas 10 pieces [, flour, with trimmed edges to form square shapes]
Chili Garlic Sauce 4 Tablespoons
Hoisin Sauce 2 Tablespoons
Directions
In a small bowl, combine chopped parsley, beaten eggs, ricotta cheese, parmesan cheese, mozzarella cheese, tomato sauce and Chili Garlic Sauce (mixture).
On a skillet, season all vegetables with salt and pepper and 2 tbsp olive oil. Grill vegetables until cooked.
In a greased half-sheet pan, assemble flour tortillas, vegetable, and mixture. Cover with aluminum foil.
Bake at 375F for 45 minutes. Remove cover and bake for another 15 minutes.
