Assigning our pastry team their stations for @dominiqueansella. Every station a cook rotates into teaches them a specific skill. Whether it's developing that finesse in finishing a dessert, learning to understand the dough and how it changes daily in lamination, developing the consistency and techniques in production, or getting a rhythm of timing during the bake. It's this well-rounded foundation, and daily challenge of learning something new just as you've gotten comfortable that makes our next generation of great pastry chefs. T-12 days until opening.
