“Clam Chowder” with littleneck clams in handmade tortellini, in ajo blanco made with almond milk, sherry and white wine, and bacon and lovage to finish. I’ve always loved clam chowder but wondered how we could prevent the clams from falling out of the shells and into the bottom of the bowl.
