Hand-scoring a few hundred of these Galettes des Rois, made with almond frangipane inside puff pastry, with a brush of egg wash before it goes into the oven until it’s golden and perfectly flaky. One of my favorites each year (think almond croissant, in cake form). Available by the slice in NYC, London and Tokyo, and whole galettes for online preorder for pick-ups through January 21st.
