I absolutely adored Fred’s in Paddington (Paddington in Sydney, not Paddington in London). Going clockwise from top left: scallop crudo, lemon vinaigrette, aubergine/eggplant, sesame lavash and summer vegetables, fried croutons, basil and colatura dressing; wood-oven roast squid with tahini and roast beetroot with preserved lemon dressing, a must-order there; another must-order, pineapple tart with passion fruit ice cream; bone-in wagyu sirloin and salad, roast Dutch cream potatoes with rosemary and thyme, roast kumera/ sweet potato with summer herb and peanut salad with yogurt and tamarind, and wilted greens with garlic and chilli.
