Eucalyptus gin martinis⠀
Serves 2⠀

Eucalyptus syrup⠀
2 cups sugar⠀
1 cup water⠀
1/3 cup eucalyptus leaves, chopped or torn in half⠀

Martini⠀
1 ½ cups ice cubes⠀
4 ounces (½ cup) gin⠀
2 ounces (¼ cup) eucalyptus syrup ⠀
2 ounces (¼ cup) fresh lime juice⠀
1 egg white⠀

To make the eucalyptus syrup: Combine the sugar and water in a small saucepan. Bring to a boil, stirring until the sugar dissolves. Reduce the heat and simmer for 3 minutes. Add the eucalyptus leaves and simmer for 15 minutes. Remove from the heat; cover and let steep for 10 minutes.⠀

Pour the syrup through a strainer into a bowl and cool completely. (The syrup can be prepared 1 month ahead. Store in an airtight container in the refrigerator. Stir before using.)⠀

To make the martini: Combine all the ingredients in a martini shaker and shake vigorously for a minute. Strain into chilled martini glasses or old-fashioned champagne glasses and serve⠀
