I found some filo pastry in the supermarket, and all the delicious food memories from #TheAthensGathering back in November came back to me; the pies filled with greens and feta, the sweet ones, breaking into million flakes that would stick to your lips thanks to the syrup, the spicy notes coming from deep within.
Yesterday I sautéed some onion with a nice yellow bell pepper and some origano, stuffed it all in many layers of filo pastry, crumbled some feta on top with some cherry tomatoes and covered it with some more filo pastry. Then baked it on the grill by the sea.
This one is the picture is just feta and rosemary. On top I sprinkled sesame seeds and drizzled more honey.
