Fresh, easy, and delicious- that’s what I want this week! Try my Spring crudités with homemade pesto. This one I make dairy free. Trust me- you want miss it! Xx Crudités with Arugula Pesto⠀
Serves 10⠀

Arugula Pesto⠀
1 cup packed fresh arugula⠀
1 cup packed fresh basil leaves⠀
1/3 cup pine nuts⠀
1 large garlic clove, peeled and pressed⠀
1 ½ teaspoons fresh lemon juice⠀
1/8 teaspoon salt⠀
1/8 teaspoon freshly ground black pepper⠀
½ cup extra-virgin olive oil⠀
⠀
Crudités Assorted Fresh Raw Vegetables Such As:⠀
Trimmed asparagus spears⠀
Peeled baby carrots⠀
Belgian endive spears⠀
Bell pepper strips in assorted colors⠀
Celery sticks⠀
Cucumber slices⠀
Grape tomatoes or baby heirloom tomatoes⠀
Trimmed green beans⠀
Trimmed radishes⠀
Trimmed sugar snap peas⠀

To make the pesto: Combine the arugula, basic, pine nuts, garlic, lemon juice, salt, and pepper in a food processor. Blend until puree forms. Gradually add the olive oil through the feed tube and process until the pesto is almost smooth. Transfer the pesto to a small bowl (The pesto can be prepared 6 hours ahead. Cover and refrigerate. Let stand at room temperature for 1 hour before serving.)⠀
