For pastry chefs, piping tips are one those essential tools to have in your kitchen, so I wanted to create a piping tip of our own for the top our Pop Fleur. Inside is a light and airy whipped yogurt made with wakamomo (rare baby Japanese mountain peaches), and when you push it up, the yogurt blooms into a rose, almost like a Russian piping tip, which creates flowers in different shapes.
