Keep it light and fresh for summer with this California Salad with a delicious Oyster Sauce Vinaigrette!

Ingredients:
4 cups assorted, mixed greens
2 scallions, thinly sliced
¼ cup sliced, toasted almonds
1 medium avocado, diced
Vegetables such as sweet corn, thinly sliced Fennel, cherry tomatoes

Seasoning:
Salt & black pepper, to taste

Dressing:
1 Tbsp. shallot or white onion, finely chopped
2 Tbsp. freshly squeezed lemon juice
1 Tbsp. Lee Kum Kee Panda Brand Oyster Sauce
1 Tbsp. maple syrup
2 Tbsp. olive oil
Salt & black pepper, to taste

How to make it:
Combine the onion, lemon juice, Oyster Sauce, and maple syrup, in a small bowl. Whisk together until well combined. Slowly add the olive oil, whisking constantly. Salt and pepper to taste. Set aside.
In a large bowl, combine lettuce, scallions, almonds, avocado, and vegetables. Toss in the dressing, and season with salt and pepper to taste. Add any additional vegetables as desired.
