Porchetta for @johnmcusimano’s Bday Weekend! Here’s how: pork belly dressed with garlic, fennel, orange and lemon zest, sage and rosemary, salt, pepper, chili flake - trimmed pork loin, wrap, roll & tie. Rub skin with baking soda and kosher salt. Chill overnight, uncovered, then cook at 500 degrees for 45 min and then 300 degrees until the porchetta has a 145 degree internal temperature. Use a serrated knife to slice and serve with lemon, arugula & sautéed broccoli rabe on ciabatta rolls.
