How many ways can you eat egg salad?! I found 4 and had 0 leftovers! Which would you try? ??

INGREDIENTS
6 hard boiled eggs
3 celery stalks, chopped
1/3 cup plain non-fat Greek yogurt
2 teaspoon dijon mustard
½ teaspoon lemon zest
Salt & pepper to taste
INSTRUCTIONS
Hard-boil 6 eggs or bake at 325F for 25 minutes. Remove from heat and immediately place in an ice water bath for 1-2 minutes.
Peel the eggs and cut into a rough dice.
Place in a large mixing bowl, then add the celery, Greek yogurt, Dijon mustard, lemon zest, salt and pepper. Stir to combine.
Serve egg salad on toasted bread with tomatoes and arugula, or enjoy atop greens for a healthy salad.
