This picture represents my love hate relation with 100% emmer ? bread. The most challenging wheat in my opinion. Very savory, very bitter flavor, very funky in a way of performance. Ive stop making it for a while, but customers were keep on asking about it and new crop from @biobabalscy seems so nice and strong that I’ve decided to give it a try and represent emmer one more time. Do you make any bread you’re not a huge fan, but you keep on making it?
