Some Food for thought- what do you do when you’re down? Shut down? Scream? Disappear?When the world doesn’t make sense and I’m down, creating something is therapy for me. In this case it’s a Cake. Being quiet, simply following my own recipe or creating a new one is all MY doing. Either I pay attention and it comes out amazing or I don’t pay attention and it comes out awful. It’s the act of being present and creating something alone where the results are solely up to me. In a world of constant change, this is a consistent. This is why I became a pro- because when life got tough this would be my therapy - an act that literally saves my life. Hope u find something that brings u peace. . From me to you, I give you my special heart healing—-Carrot Cake with Toasted Maple Coconut Ingredients - 2 cups all purpose gluten free flour ( I used a mixture of buckwheat, cassava, sorghum, arrowroot starch ) 1/3 cup maple sugar or date sugar 1 tsp baking soda 1 tsp baking powder (aluminum free) 1 tsp Himalayan salt 1 tsp cinnamon 1 tsp ground fresh vanilla bean 1/2 tsp fresh ground nutmeg 1/4 tsp cloves 1/4 tsp ground dried ginger 3/4 tsp xanthan gum 2 cups diced carrots 1/3 cup olive oil or oil of choice 1/2 cup applesauce 1 extra ripe banana 1/3 cup maple syrup Preheat oven to 350 Combine all dry ingredients in large bowl Combine all wet ingredients in with a standing mixer or hand mixer combine. Slowly add some dry Ingredients to wet and combine until all incorporated. Geese and pan of choice and pour in batter. Bake for around 25-35 minutes. Until a toothpick in center comes out clean. Remove from oven and let cool I added walnuts to mine. Can add cranberries, chocolate chips, raisins or whatever For the icing I just took some Coconut Manna (butter) mixed with some maple syrup, lemon and vanilla and warmed into a sticky liquid and poured over cake.
