Buckwheat loaf, but Not gluten free. Perfect for meat or white cheese sandwich, but for me it tastes best with butter and honey. I make it with raw groats - some of them I mill and scald with hot water and mix this porridge into my wheat rye mother dough. Rest of them gets slightly toasted and soaked in hot water, than added to a dough during second fold.
