Purple Sweet Potato Blueberry Pancakes in the making. I always get antsy to flip em, so I thought if I took a picture it would help slow my roll...But when they were ready, I inhaled them before I remembered to take a pic of the finished product, hence the cleared plate (with remnants of almond butter maple syrup). Love that these can be made gluten & dairy free or with all the gluten & dairy your ? desires!
