Rosé for #NYE2018 anyone? This Citrus Gin Spritz from @judy.kim balances bitter and sweet.

Citrus Gin Spritz

4 ounces gin
2 ounces bitter lemon simple syrup
1 bottle Mionetto Rosé Prosecco
4 small rosemary sprigs, optional
Freshly ground black pepper, optional

Bitter Lemon Simple Syrup
1 cup sugar
1 1/2 cups water
1 lemon, peeled into strips, juiced and seeds removed
In a small sauce pan add sugar, water, lemon juice, lemon peel and remaining lemon; bring to a boil and simmer on low for 20 minutes. Simple syrup should become thickened and slightly bitter from the pith. Transfer lemon peel onto parchment paper, discard remaining lemon and let syrup cool. Can be made in advance and kept in fridge.
Directions: In a cocktail shaker, combine gin, simple syrup and ice; shake vigorously until cold. Strain into 4 coupes and top with prosecco. Garnish with candied lemon peel, sprig of rosemary and finish with black pepper. Alternatively, batch make the base and pour into rocks glasses filled with ice. Enjoy!
