For Lunar New Year, here is another recipe with Kenwood, it’s so easy to bake these cute peanut cookies in bulk using their Chef XL Sense kitchen mixer.
Ingredients
50g unsalted butter
50g sugar
1 egg
25ml milk
40g peanut powder
150g flour
3 Tbsp creamy peanut butter
Method:
1. Attach K beater
2. Add soften butter & sugar. Beat at medium speed until creamy.
3. Add egg yolk and milk.
4. Add peanut powder. Mix on medium speed until incorporated.
5. Add cake flour. Start mixing on slow speed then gradually increasing the speed.
6. Add peanut butter and mix until dough resembles chunks.
7. Remove dough from bowl. Wrap in cling wrap and set in chiller for 30mins.
8. Roll out to about 3mm thickness. Cut out semi circles shapes.
9. Place cookies on tray lined with parchment paper
10. Add chocolate chip for fish eyes. Make fish scales design using straw.
11. Bake at 170C with fan, for about 10-12mins. Remove and set aside to cool.
