Valentine’s Day Waffles (Gluten & Dairy Free) ? I cannot tell a lie (even an Instagram fake reality one) - I stacked these pictured waffles in a variety of ways in an effort to hide the dud waffles with cracks from you all. Here’s the recipe: - Ingredients: 2 cups gluten free Oat flour (If you don’t care if these are gluten free use whatever kind of oat flour you want ~ grind up some old Quaker packets into a powder for all I care) 1 cup almond flour 1 1/2 cups of room temp cashew milk or any kind of nut milk (I will forever laugh at “nut milk” b/c I’m a pubescent 7th grader at heart) 2 eggs 1 tsp arrowroot flour (won’t make it or break it -if you don’t have- it screw it) 1 tablespoon vanilla extract 1 tsp salt 1/2 tablespoon baking powder 1 tsp Cinnamon 1/4 c coconut oil (melted, Dummy!) 1/2 tablespoon apple cider vinegar 1 tsp of maple syrup (+ extra of course for topping...unless you hate yourself & don’t want syrup on your waffle) Mix all of the above together. I’m not going to coddle you & tell you to mix it together in a “large bowl” like other recipes. OBVIOUSLY you need to mix it in a bowl! What are you going to do throw all the ingredients into a suitcase like a damn lunatic?!? You’re welcome to, but the cleanup is gonna be a bitch. Grease a waffle iron with some melted coconut oil or cooking spray. *If you don’t have waffle iron, start dropping hints to your loved ones now and maybe it will get into their thick heads to get one for you by the holidays! Pour batter into waffle iron and wait for it to be done. In the meantime, get whatever toppings you want ready...berries etc. or go hose down that suitcase if you chose to use that for mixing. Take out the waffle when it’s nice n’ crispy. Top with your favorite waffle toppings OR your least favorite if you want to punish yourself. These freeze really well (and are also great frozen for teething toddlers)- so sometimes I double the recipe to have extra to freeze (since I normally inhale the entire first batch). Probably should’ve wrote that at the beginning of the recipe so you could’ve doubled it then, but I can’t think of everything!! Don’t be so hard on me, it’s Valentine’s Day!!! ?
