work hard, eat well! ? after @elizaann360 and i made my first of 2 auditions needed this weekend, it was time to EAT! i liked my #vegan mushroom stroganoff so much i made it again (it was better first time - i screwed up my measurements and forgot to use white wine - still delicious tho!) BUT my vegan #creamofbroccoli soup was exactly to this chef’s satisfaction! here is how i did it. i think these are the correct measurements. heat sprinkle of salt on medium 1 min add 2 TBSP coconut oil, heat for 1 min add 1 medium onion, chopped. sauté on low/medium for 5 mins. add 1/2 lb chopped broccoli, 1 chopped celery stalk, 1 chopped carrot, 1 tsp miso paste. sauté for another 5 mins or so, adding a little sprinkle of veggie broth if you need add 3 cups veggie broth, 1/2 cup nutritional yeast, 1 tsp each cardamom & turmeric, chili powder to taste, 1 star anise, and 1 bay leaf. bring to simmer and let cook, covered, for another 20 mins or so. add 1/2 cup coconut cream. add 4 oz firm tofu, chopped. cook another 3 mins on low, stirring to blend the coconut cream. working in batches, transfer the soup to your blender or @vitamix (i believe #vitamix is the best and i’ve been using mine for almost 6 years now). blend til smooth, transfer to a large bowl. when you have your final batch, add 1 cup of raw spinach leaves before blending. then transfer all back to pot to stay warm til eating. garnish with a handful of @daiyafoods #vegancheddar, @followyourheart #vegansourcream, and daikon sprouts. #vegancooking #nocookbook #practicemakesperfect #aboutlastnight #veganfood #vegansoup
