Two words…. power bowl. If you can’t tell by now, I love recipes that are quick, easy and pack a nutritional punch. Oh, and they have to taste great too! This Spiced Quinoa, Sweet Potato, Broccoli & Cranberry Salad checks off all the boxes. It’s the perfect pairing for just about anything you can cook on a BBQ. Ingredients:

3 Sweet Potatoes
Quarter Cup Olive Oil
1 Cup Quinoa
1 Teaspoon Ground Cumin
2 Cups Broccoli
1 Bunch of Asparagus
One Third Cup of Dried Cranberries
One Third Cup of Chopped Herbs
3 Table Spoons Orange Juice
One and a Half Tablespoons White Balsamic Vinegar

Instructions

1) Preheat oven to 400 degrees Fahrenheit
2) Place sweet potatoes on large parchment sheet
3) Drizzle one table of alive oil over top
4) Season with Salt + Pepper
5) Roast for 25-30 minutes
6) Meanwhile, put the quinoa, turmeric, cumin and two cups of water in a medium sauce pan and bring to boil
7) Reduce heat, cover and let simmer for 12 minutes
8) Remove from heat and set aside to cool
9) Blanch the broccoli and asparagus in saucepan of boiling of boiling water
10) Drain and refresh under cool water
11) Put all ingredients in large bowl and whisk together while adding 3 more tablespoons of olive oil.
12) Add fresh seasoning and salt
13) Enjoy!
