The celebrity chef José Andrés’s new food hall, Mercado Little Spain, is an exuberant labor of love. On entry, visitors are greeted by a buzzing maze of fifteen kiosks, modelled on the bazaars of Spain. Each offers a different regional specialty, from Galician-style empanadas to gambas al ajillo.
