I would walk with my dad in Brooklyn to the corner bakery, get a loaf of Italian bread and cold cuts from the deli next door, go home and make the biggest sandwich I could. It was my time with my father. This was the closest I was with my dad throughout my life. I LOVED our ritual. You get older and things change. Then you get diagnosed with a disease that doesn’t even allow a small gift like and Italian hero sandwich to be available to me anymore. So many don’t understand when you have an autoimmune disease like #celiac it takes so much of your life away. Food is parties, celebrations, family and memories. With a huge portion of that food taken away you lose a lot of those things, or at least the ability to enjoy them freely. That’s why when people ask me HOW I developed all these recipes I say, “shear need and determination”. Need to Be able to enjoy things like bread still.
