Like a dessert rose, full of middle eastern vibes thanks to my two favorite ingridients: za'atar and freekeh. As many of you probably tried za'atar, freekeh might seem quite unknown. Frikeh are pretty much green durum wheat kernels that have been toasted thanks to what it has amazing smoky flavor and a lot of nutritions.

Back in a day people used to burn whole fields of durum wheat and than tresh the remained grains and use them for cooking. These days the way of making it is less romantic, but the flavor has still the magic.

We add it in to our basic wheat rye dough in two ways: as a flour porridge and soaked grains. We also add some za'atar olive oil that creates this double crust to embrace that awesome technique that @hellafrost shared with me one sunny day at @dellafattoria Bakery in Petaluma.
