Low Carb Protein Racciarelli

Ingredients:
2 cups almond flour
1 cup @1stphorm Level-1 Vanilla Ice-cream
1/2 cup truvia
4 egg whites
5 drops of almond extract
1 lemon (grated small half of the peel)
1/4 cup honey toasted almonds (got these from Trader Joe’s) .

Pre-heat over to 325 degrees.
In a mixing bowl combine the almond flour, protein powder, stevia, lemon rind crumbs and mix together with a fork or wooden spoon. Add in the 4 egg whites and mix together, you should have a thick paste. Take a cookie sheet and scoop spoonfuls of dough on to the pan.
Bake for about 10 minutes.
Remove and cool. Dust with Swerve Stevia Confectioners sugar. .
Makes about 12 cookies.
Macros per cookie:
Protein: 11 grams
Carbs: 5 grams
Fat: 8 grams .
