-1/2 cup flour
-salt and pepper
-4 chicken cutlets or 2 boneless chicken breasts sliced in half about 1/2 inch thick to create the 4 chicken cutlets
-olive oil
-1 tablespoon minced garlic
-1 cup chicken broth
-3/4 cup heavy cream
-fresh parsley
-oregano
-basil
-1/2 cup (or more as desired) parmesan cheese -2 cups chopped fresh spinach
-1 pint cherry or grape tomatoes halved

1. Season chicken with salt & pepper and dredge the cutlets in flour
2. Once the oil is hot in a pan over medium high heat, add the chicken and cook for about 2/3 minutes on each side until they are golden brown. Transfer to a plate once they are cooked
3. Turn heat down to medium and add the garlic to the same pan with the brown bits left over from the chicken. Cook for about a minute.
4. Add the chicken broth and start scraping off all the brown bits on the bottom of the pan (deglazing). These brown bits have the most flavor!
5. Stir in the cream. Add the grape tomatoes and spinach. Cook until spinach is wilted.
6. Add the basil, oregano, parsley, salt, and pepper.
Add the grated parmesan cheese and stir. Bring to a simmer and cook, stirring frequently, until the sauce thickens. About 4/5 minutes.
7. Add the chicken back to the pan and cook another two minutes until chicken is hot and cooked through.
Spoon sauce over chicken, add parsley, and serve.

You can pair this chicken with anything! Veggies, pasta, rice, or for a healthier alternative, zucchini noodles or cauliflower rice. ENJOY!
