HOME GUESTS | @lailacooks. Salsa Verde and Salt Boiled Potatoes.
Begin by putting a kilo of small sized potatoes in a pot and covering by 2 cm of water.
Add a handful of bayleaf, half a garlic head, and 1/4 cup of salt.
Boil till the potatoes are soft and the water evaporates. You will be left with a salt film on the potatoes. This is normal. Meanwhile make the salsa.
Use any soft herbs you have (parsley, basil, tarragon, cilantro etc.) and chop finely with a knife. I always use parsley and the rest depends on what I have.
Use double the amount of parsley to any other herb. Add olive oil till the herbs are totally submerged, a little lemon juice and zest, cilantro, red wine vinegar and salt and pepper. Spoon the salsa over warm potatoes.
