Happy Weekend! A lot of you have asked for the IG Live video I did recently with @TanFrance where we made a Cherry Clafoutis (one of my favorite French desserts). Here it is! I hope you'll bake this at home now that sweet summer cherries are in season. Here's what you'll need:

INGREDIENTS
2 large egg yolks
3 large eggs
1 1/4 cups sugar
1/3 cup + 1 tbsp AP flour
1 1/8 tsp baking powder
1 cup whole milk
1 cup heavy cream
1/2 vanilla bean, split, seeds scraped (or 1/2 tsp vanilla extract)
4 tsp Kirsch (optional)
1 lb fresh sweet cherries, pitted

EQUIPMENT
Mixing bowl
Whisk
Spatula
9” Round Ceramic Pie Dish or Metal Cake Pan

1. Preheat oven to 350°F.
2. Butter & flour the baking dish: butter base, sides, & inside edges, pour in some flour, shake around until evenly coated. Tap out excess flour.
3. In large mixing bowl, whisk together egg yolks, eggs, & sugar til evenly combined.
4. Add flour & baking powder, stir til combined.
5. Add milk, cream, & vanilla, stir til combined. Stir in Kirsch (optional).
6. Spread cherries in even layer on bottom of prepared pan. Pour in batter til it reaches just under the top rim (this won't rise much). Bake til custard is just set, edges are golden, & a paring knife poked into the center comes out clean, about 40-55 min (NOTE: baking time will vary depending on how large/deep your dish is; check after 30 min if you have a smaller pan). Let cool 15-20 min. Dust w/ confectioners sugar, serve w/ vanilla Chantilly.

VANILLA CHANTILLY
(Recipe from my book, Everyone Can Bake)

INGREDIENTS
2 cups + 2 tbsp cold heavy cream*
1/4 cup sugar
1/2 vanilla bean, split, seeds scraped (or 1/2 tsp vanilla extract)
* NOTE: Make sure cream is cold. If room temp or warm, it won’t whip up.

EQUIPMENT
Whisk (or hand/stand mixer w/ whisk attachment)

1. In stand mixer w/ whisk attachment (or use a large bowl & hand mixer/whisk), combine cream, sugar, & vanilla. Whip til the cream holds soft peaks, 3-4 min. If whisking by hand, use a large metal bowl and steadily whisk for roughly 5 min til soft peaks.
