Inspired by the pesto @ciaosamin made in @saltfatacidheat - I made ginger scallion sauce with a mortar & pestle. I’m never going back now to the old way. I did add a couple cloves of garlic to ginger, scallions, momofuku savory salt and olive oil. (I microwaved the oil before mixing it in) as I was serving it with chilled poached chicken.
