Back in #MexicoCity we had the most divine dinner at @tamalesmadre a tiny vegetarian restaurant in #Juarez dedicated to #TAMALES! The maiz is dried and ground daily in the same room where they are intricately prepared and served using traditional techniques that would be dying out were it not for #ReginaVelasco @reginavel and her obsession with corn! We drank beer made from corn as well as #mezcal and whiskey from @mezcalpierdealmas Here is the menu from this most special place:

1/ Frijol and hierba santa. Tamal filled with bean paste, wrapped in hoja santa served with tomatoe “caldillo”
2/ Mole y plátano macho. Filled with mole “coloradito” and plataine puree, bathed in “mole negro”
3/ Ensalada de nopales curados. Cured cactus served with cherry tomatoes, “requeson”, pickled onion and cilantro
4/ Tamal de masa colada y Huitlacoche. Wrapped in bannana leaf, filled with fresh “huitlacoche” served over a fresh cheese sauce.
5/ Tamal de cacao. Toasted cacao mixed in blue corn masa; wrapped in totomoxtle leaf served over “pinole” natilla
6/ Tamal de nuez. Pecan nuts mixed with red corn masa; wrapped in totomoxtle leaf served with caramel ice cream
