SWEET & SALTY TRAIL MIX / 24 servings
2 tbsp maple syrup
1 tbsp coconut oil, melted
1 tsp vanilla extract
1/4 tsp almond extract
1/4 tsp sea salt, to taste
ground cinnamon, optional
2 cups mixed nuts
1 cup pepitas
1 cup coconut flakes
1 cup chocolate candies
1 cup dried cranberries
1. Preheat oven to 350F. Line a baking sheet with parchment paper.
2. Stir together maple syrup or honey, melted coconut oil, vanilla extract, and sea salt. In a large bowl, combine nuts, pepitas, and coconut flakes. Pour the maple mixture over the top and stir gently to coat.
3. Transfer the mixture to the lined baking sheet. Bake for 10-15 minutes. Gently stir halfway through baking time. Let cool completely. Gently break apart clumps (if needed) and add the chocolate candies and dried fruit.
4. Store in an airtight container in a cool, dry place for up to one month.
